Bagel and Cream Cheese With Tomato and Cucumber

•2 bagels, split in half
•1/2 cup cream cheese (about 4 ounces)
•1 small Kirby cucumber
•1/2 plum tomato, cut into wedges

1. Toast the bagel halves and spread each with the cream cheese.
2. Cut the Kirby into 8 rounds and several thin slices that can be used to form eyeglasses.
3. Cut the tomato into 4 wedges and use one on each bagel half to form a smile.

Falafel Sandwiches

•4 green onions, cut into 1-inch pieces
•2 clove(s) garlic, each cut in half
•1/2 cup(s) packed fresh Italian parsley leaves
•2 teaspoon(s) dried mint
•1 can(s) (15 to 19 ounces) garbanzo beans, rinsed and drained
•1/2 cup(s) plain dried bread crumbs
•1 teaspoon(s) ground coriander
•1 teaspoon(s) ground cumin
•1 teaspoon(s) baking powder
•1/2 teaspoon(s) salt
•1/4 teaspoon(s) ground red pepper, (cayenne)
•1/4 teaspoon(s) ground allspice
•Olive oil nonstick cooking spray
•4 (6- to 7-inch diameter) pitas
The following ingredients are for toppings and are not necessary.
•Sliced romaine lettuce
•Sliced tomatoes
•Sliced cucumber
•Sliced red onion
•Plain low-fat yogurt

1. In food processor with knife blade attached, finely chop green onions, garlic, parsley, and mint.
2. Add garbanzo beans, bread crumbs, coriander, cumin, baking powder, salt, ground red pepper, and allspice and blend until a coarse puree forms.
3. Shape bean mixture, by scant 1/2 cups, into eight 3-inch round patties and place on sheet of waxed paper.
4. Spray both sides of patties with olive oil spray.
5. Heat nonstick 10-inch skillet over medium-high heat until hot.
6. Add half of patties and cook 8 minutes or until dark golden brown, turning once.
7. Transfer patties to paper towels to drain.
8. Repeat with remaining patties.
9. Cut off top third of each pita to form a pocket.
10. Place warm patties in pitas.
11. Serve with choice of accompaniments.


Easy Pizzettes

•1 cup pizza sauce
•8 English muffins, split, toasted
•2 cups shredded provolone cheese (8 oz)
Assorted toppings
•2/3 cup each sliced mushrooms
•Sliced ripe olives
•Chopped bell pepper
•Chopped red onion

1. Heat oven to 425ºF.
2. Spread 1 tablespoon pizza sauce over each English muffin half.
3. Sprinkle each with 1 tablespoon of the cheese.
4. Arrange toppings on pizzas.
5. Sprinkle with remaining cheese.
6. Place on ungreased cookie sheet.
7. Bake 5 to 10 minutes or until cheese is melted


Hot Chocolate Cookies

•1 bag of chocolate chip cookie mix
•1/2 cup butter, softened
•1 egg
•2 envelopes (1 oz each) instant hot cocoa mix
•2 envelopes (0.2 oz each) marshmallows (from 1 box marshmallow lovers hot cocoa mix with marshmallows)
•Powdered sugar or unsweetened baking cocoa, if desired

1. Heat oven to 375°F.
2. In large bowl, stir cookie mix, butter, egg, 2 envelopes cocoa mix and 1 envelope marshmallows until stiff dough forms.
3. Drop dough by slightly less than tablespoonfuls 2 inches apart on ungreased cookie sheet.
4. Press marshmallows from remaining envelope on tops of dough.
5. Bake 9 to 11 minutes or until edges are light golden brown.
6. Cool 1 minute; remove from cookie sheet to cooling rack.
7. Cool completely.
8. Sprinkle with powdered sugar.
9. Store tightly covered at room temperature up to 1 week, or freeze up to 3 months.
