Fun & Delicious Meal To Have With Your Kids

Breakfast Toast Cups

Total Time: 35 minutes

•6 slices of bread
•Large handful of spinach
•1/4 cup cheese
•6 Eggs
•6 Slices of Bacon, cooked
•Salt & Pepper to taste
•2 tablespoons of butter OR butter cooking spray

1. Preheat your oven to 375° F. Lightly butter/ spray 6 cups of a muffin tin.
2. Roll out your slices of bread with a rolling pin to make them rather thin.
3. Cut out a ~4-5 inch circle from the corner of each piece of bread. Save the scraps of bread as you’ll need them to fill in a few holes in your toast cups.
4. Cut the circles in half and lightly butter/ spray each piece
5. Place a small scrap of bread in each muffin tin to cover about 2/3 of the bottom like so:
6. Place 2 circle halves of bread into each cup and position them so that there are minimal holes.
7. Next, load in your remaining ingredients with the egg going in last. I put 3-4 leaves of spinach at the very bottom with a layer of cheese on top of that.
8. Position the bacon where you want it and crack one egg over each muffin tin.
9. Bake in the oven until the egg whites have set and are thoroughly white, roughly 15 minutes.
10. Once out of the oven, sprinkle with a bit of salt and pepper. Serve immediately and ENJOY!

Taco Pizza

•1 pound lean ground beef
•1 envelope taco seasoning mix
•1 (10 ounce) can refrigerated Pillsbury pizza dough
•1 (16 ounce) can refried beans
•2-3 cups shredded cheddar cheese (I used Colby and Monterey Jack cheese)
•1/2 cup chopped tomatoes
•1/4 cup sliced black olives
•4 green onions, chopped

1. Heat oven to 375 degrees. Brown ground beef in a large skillet, over medium-high heat.
2. Drain grease. Add taco seasoning to the ground beef according to package directions.
3. Unroll pizza dough onto an ungreased cookie sheet. Let dough sit at room temperature for 5 minutes.
4. Press dough over the bottom and up along all 4 sides the of cookie sheet.
5. Bake pizza dough for 8-10 minutes, or until lightly golden. Remove from oven.
6. Place refried beans into a microwavable-safe bowl. Microwave for 1 minute.
7. Stir well and then spread beans evenly over the top of the warm pizza crust.
8. Top with the cooked ground beef mixture, sprinkle with cheese and then add the tomatoes, black olives and green onion.
9. Return to oven and bake another 5-7 minutes, or until cheese is melted.
10. Serve immediately and enjoy!


Baked Spaghetti Squash

Total Time: 45 minutes – 1 hour

•1/2 pound ground turkey or chicken
•1 tablespoon olive oil
•1 large spaghetti squash
•1 egg
•2 cups sauce
•1 cup part skim ricotta cheese
•1 1/2 cups part skim shredded mozzarella cheese
•1 teaspoon fresh oregano
•5 fresh basil leaves, torn salt & fresh ground pepper
•4 10 oz ramekins

1. Preheat the oven to 350 degrees.
2. Poke the spaghetti squash 10 times and microwave for 10 to 12 minutes stopping every 3 to 4 minutes to turn.
3. You’ll know it’s done when the skin starts to buckle.
4. Remove and split open. While it’s cooling off heat a non-stick pan over medium high heat for 3 or 4 minutes.
5. Add oil to the pan and blot the turkey meat dry before adding to the pan.
6. Space the meat out in the pan and cook until it is just brown on both sides.
7. As long as it is browned, it can be a little under cooked. It will cook the rest of the way in the oven.
8. Set aside and begin scraping out your squash with a fork. (Your child can help out with this process)
9. Transfer scraped squash into a colander and let drain while you are prepping the rest of the ingredients.
10. In a large bowl, mix together sauce, ricotta, egg, 1 cup of cheese, oregano, basil and salt & pepper to taste.
11. Mix in the drained spaghetti squash until it’s all well combined.
12. Place one scoop of squash mixture in each ramekin covering the bottom.
13. Layer browned meat on top of squash mixture and then place another scoop of squash on top of the meat.
14. Sprinkle remaining cheese on top of each and place on a cookie sheet.
15. Bake for 35 to 45 minutes or until cheese is melted and bubbly and squash looks set.
16. Remove from oven and let cool for 5 minutes before serving.


Chewy Cookies and Cream Bar

•One 16 oz package of Oreo
•5 cups Large Marshmallows
•4 tablespoons butter

1. Place Oreos in food processor and pulse until ground.
2. Melt marshmallows and butter in microwave until puffed, about 1 1/2- 2 minutes.
3. Remove and pour in ground Oreo Cookies.
4. Stir to combine then transfer to a foil lined 8×8 inch baking pan.
5. Let set up for 10 minutes.
6. Remove bars out of pan with edges of foil and cut into squares.
