Spring Celebration Brownies
 
Ingredients

•1 box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix Water, vegetable oil and egg called for on brownie mix box
•2 cups miniature marshmallows
•2/3 cup pastel-colored candy-coated chocolate candies
•3 tablespoons semisweet or milk chocolate chips
•1/4 teaspoon shortening

Directions

1. Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 9-inch square pan with cooking spray or shortening. Make brownies as directed on box–except bake 32 minutes. Sprinkle with marshmallows; bake 5 minutes longer or until marshmallows are puffed and golden. Sprinkle with candies.
2. In small microwavable bowl, microwave chips and shortening uncovered on High 10 to 15 seconds; stir until smooth. Drizzle over bars. Cool completely, about 1 1/2 hours. For easier cutting, use plastic knife dipped in hot water. For bars, cut into 4 rows by 4 rows.


No-Bake Cookies

Ingredients

•8 whole-wheat graham cracker squares, finely ground
•1/4 cup(s) raisins
•1/4 cup(s) smooth natural peanut butter
•2 tablespoon(s) honey, plus 2 teaspoons
•4 teaspoon(s) unsweetened coconut

Directions

1. Combine ground whole-wheat graham crackers, raisins, peanut butter and honey in a small bowl. Pat into 16 cookies and press lightly in coconut.


Hot Dog Men

The following recipe makes 4 servings change ingredient numbers as see fit
•4 hot dogs
•4 slices bread
•4 slices American cheese
•ketchup and mustard to taste

Directions

1. Make a slit down the middle of one end of each hot dog; this will be the legs. At the other end, make a small slit each side; these will be the arms. Bring a saucepan of water to a boil, and add the hot dogs. Boil for about 5 minutes until the slits open up.
2. Place slices of cheese onto slices of bread. Set the hot dog men on top. Use ketchup and mustard to make a face, hair and clothes or buttons.


Quick Kebabs

Ingredients

•1/2 ounce(s) cubed roasted deli turkey
•1/2 ounce(s) cubed Cheddar cheese
•1/4 cup(s) grapes
•6 dried apricots

Directions

1. Thread turkey, cheese, grapes and apricots onto a wooden skewer.


Hot Dog and Spaghetti Creatures

Ingredients

•Hotdogs (1 per person)
•Dry spaghetti sticks, for breaking in half
•Optional: Try different pasta shapes, such as egg noodles or curly pasta (don’t break curly pasta in half)

Directions

1. Cut the hot dogs into small pieces.
2. Break the dry spaghetti sticks by bending them in half, or use curly pasta.
3. Poke the spaghetti sticks through the hot dogs, making “arms” and “legs” to make creatures.
4. In boilling water, cook the hot dog/spaghetti creatures for 6-8 minutes.
5. Remove, let cool, and then eat!


Cake Balls

Ingredients

•1 (18.25 ounce) package chocolate cake mix
•1 (16 ounce) container prepared chocolate frosting
•1 (3 ounce) bar chocolate flavored confectioners coating

Directions

1.Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
2.Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
3.Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.


Mac and Broccoli Cheese Cups

Mac and Broccoli Cheese Cups

Ingredients

•3 tablespoons butter or margarine
•1/2 cup Progresso® plain or Italian style panko crispy bread crumbs
•4 oz uncooked elbow macaroni
•1/4 cup Gold Medal® all-purpose flour
•1 teaspoon salt
•1 cup milk
•1 package (12 oz) Green Giant® Valley Fresh Steamers® frozen broccoli and cheese
•1 cup shredded sharp Cheddar cheese (4 oz)

Directions

1. Heat oven to 375°F. Place foil baking cup in each of 12 regular-size muffin cups. In small microwavable bowl, microwave 1 tablespoon of the butter uncovered on High 15 to 30 seconds or until melted. Stir in bread crumbs; set aside.
2. Cook and drain macaroni as directed on package.
3. Meanwhile, melt remaining 2 tablespoons butter in 4-quart saucepan over low heat. Stir in flour and salt. Cook 1 minute, stirring with whisk. While continuing to stir, add milk. Cook and stir 1 to 2 minutes or until thickened and smooth. Stir in frozen broccoli and Cheddar cheese. Cover; cook 8 to 10 minutes, stirring occasionally, until thoroughly heated. Remove form heat; stir in macaroni until well blended.
4. Spoon about 1/4 cup macaroni into each cup. Top each with 1 teaspoon bread crumb mixture.
5. Bake 20 to 25 minutes or until hot and topping is golden brown. Cook 5 minutes; remove from pan.


Mini White Pizzas

Ingredients

•1 1/2 cups Original Bisquick® mix
•1/3 cup boiling water
•1/2 cup reduced-fat or regular Alfredo sauce
•1/2 cup finely chopped cooked chicken
•1/2 cup chopped fresh mushrooms
•2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
•1 cup shredded mozzarella cheese (4 ounces)
•Additional fresh basil leaves, if desired

Directions

1. Heat oven to 450°. Spray large cookie sheet with cooking spray. Stir Bisquick mix and water until soft dough forms. Divide dough into fourths. Pat each part of dough into 6-inch circle on cookie sheet, using fingers dusted with Bisquick mix; pinch edge to form 1/2-inch rim.
2. Spread Alfredo sauce on dough. Top with chicken, mushrooms and chopped basil. Sprinkle with cheese.
3. Bake 9 to 11 minutes or until crusts are golden brown and cheese is bubbly. Garnish with additional basil leaves.


Quick Chicken QuesadillasQuick Chicken Quesadillas

Ingredients

•6 oz refrigerated cooked Southwest-flavor chicken breast strips (from 9- or 12-oz package)
•1/2 cup Old El Paso® Thick ‘n Chunky salsa
•1 package (11 oz) Old El Paso® flour tortillas for burritos (8 inch; 8 tortillas)
•Cooking spray
•2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
•1/4 cup sour cream

Directions

1. Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa.
2. Spray 1 side of 1 tortilla with cooking spray; place sprayed side down in 10-inch nonstick skillet. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.
3. Cook uncovered over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.


Pizza Cupcakes

Ingredients

•1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
•1/2 cup pizza sauce
•1/4 cup mini pepperoni slices
•1/4 lb mild Italian sausage, cooked and drained
•1/2 cup shredded mozzarella cheese (2 oz)

Directions

1. Heat oven to 375°F. Spray 8 regular-size muffin cups with cooking spray. Unroll dough; separate into 8 triangles. Press into muffin cups.
2. In small bowl, mix sauce, pepperoni, sausage and 1/4 cup of the cheese. Spoon about 2 tablespoons mixture into each dough-lined cup; sprinkle each with about 1 teaspoon additional cheese.
3. Bake 16 to 18 minutes or until lightly browned. Immediately remove from cups and serve.
